It's powerful, refined, and offers great persistence. Before reaching the table, it ferments in temperature controlled stainless steel, ages for 12 months in Allier barriques, and ages in bottle for another six months. The result is a wine that pairs well with any meal, perfect with red meats, game, venison, and strong, spicy
